The story

A story that begins in Puglia

Giuseppe Santamaria grew up in Puglia, where the olive tree belongs to the landscape as much as to the table. He kept a simple idea of cooking from it: good ingredients, few gestures, nothing to hide.

In 2005 he opened L'Huile sur le Feu on rue de Marchovelette, a step from the centre. Namur was no accident: a city on a human scale, where people still take the time to sit down at a table. 21 years on, the house has not changed course.

Olive oil

The oil, first

The name of the house is not a figure of speech. Olive oil is where a dish starts, not how it is finished: white truffle, chilli, lemon, mandarin, mint — each plate gets the one that suits it, chosen for it.

For that we work with Oliviers & Co, a house specialising in extra virgin olive oils from around the Mediterranean. Theirs are the oils you find at the table — and on the shelves of our shop, if you want to take them home.

A good oil does not draw attention: it draws attention to everything else.
